The carob tree (Ceratonia siliqua), is an emblematic tree on the Mediterranean landscape and belongs to the legume family, which has been cultivated since ancient times. The fruit of the carob tree is an edible dark brown, elongated and curved bean. It contains seeds and pulp that hold different phytonutrients.
Spain is the leading producer of European Carob, where there are over 100 genetically unmodified (non-GMO), natural varieties.
